Tortilla Pizza with Tomato Sauce

Ever get that craving for a pizza but you just don’t want to spend the money on ordering a pie or don’t have any dough prepared? Well, you can have pizza in just 20 minutes if you have a flour tortilla in your pantry. I must say, I was making this and my home filled with all of the smells of a typical pizza. It was amazing! Especially when the fresh garlic started to cook – the smell got even better. After all, pizza is a guilty pleasure.

There are so many varieties of pizza and this I must say is one of the easiest around… you don’t have to toss the dough to make it flat or make a perfect circle… it’s already done. No kneading involved. You do, however, have to really like thin pizza. This type of ‘dough’ comes out of the oven as if it’s almost a brick oven pizza… with a thin consistently and can almost break off like a cracker. Well, not quite. With the sauce that you pick, the tortilla will soak up some of the tomato juice and it’ll create the perfect texture for your perfect pizza.

Now, with this recipe I did put on several toppings, but as you know, pizza can pretty much have anything you desire. So, feel free to change it up… and let me know what you put on it.

Cooking Time: 20 Min

Prep Time: 10 Min

Yield: 1 Serving

  • 1 Flour Tortilla (doesn’t matter on size)
  • 1/4 cup of your choice of Tomato or Pizza Sauce
  • 1/2 cup of shredded or sliced Mozzarella
  • 4 Pepperoncini Peppers sliced
  • 3 cloves of sliced fresh Garlic
  • 1 cup of Spinach
  • 1 tsp of ground Black Pepper
  • 1 tsp of Italian Seasoning

Preheat oven to 375 degrees F. Place Flour Tortilla on a non-stick baking sheet and cover with your choice of sauce. Make sure to leave about a 1/4 of an inch sauce free for a crust. Next, take your Cheese and toppings (Pepperoncini, Garlic, and Spinach) and evenly distribute throughout your pizza. Add on additional seasonings to add for extra flavor. Place pizza in oven for about 15 minutes or until pizza crust is golden brown on the bottom. Take out and let sit for 2 minutes, then cut into pizza slices.

Just writing this has me wanting more! This does only serve once person, but you can always make more and you can change it up with adding your own variation of toppings. Add in pepperoni, sausage, peppers, onions, sardines, mushrooms, fresh basil… it is pizza after all so make it to your liking! Enjoy!
